Any uses for tires that have tears in the sidewall or torn off knobs or just plain worn down tread?

Garbage. Unless you want to get creative and use them for chainstay protectors as discussed in a thread a month ago.

If you have a trainer that you use your bike on, you can use your old tires for that. I hope to get a deal on one for this winter but I guess they eat tires so you don't want to put good rubber on them.

I consider the old tires hanging from the ceiling in my garage as art. I know it may sound strange but who decorates there garages anymore and it is a male's domain.
This winter I am going to put some of the ones I don't use anymore up for sale on this site. $5 bucks or less for a tire with many miles left on it should hopefully sell it.
John, have you been riding much lately? Are you interested in doing some night riding?

Easy one... eBay! There's always a bidder for anything you try to sell on there!

If the tread isn't comletely gone, then you could stud them and use them for winter riding - snow, ice and such.

I ride 'em till the threads start coming off the sidewall! That way I don't feel bad throwing 'em. :)
