so i know that the front rotor size is determined by the fork, but how do i find out how big of a rotor i should order for the rear?

Front rotor size isn't necessarily determined by your fork, though it may be a limiting factor.

Rear rotor size is a matter of personal preference also. 160mm is sufficient for most, using different caliper mount adapters allows for use of other (bigger) sizes. Caliper and rotor sets usually include the appropriate adapter for that particular rotor.

There is no need for >160mm rear rotor in the Midwest unless maybe you're riding a loaded tandem. All you're going to do is skid more.

Some fork mfrs place a limit on rotor size for QR forks - often 185mm - but most late model forks now accommodate up to 8"/203mm rotors even if QR.
