I was wondering if anyone has done or knows of any trail possibilities for multiple day rides/trips. I am looking to take a couple days to ride hard.

Are you looking for pure off-road? MN does not really have anything that is multi day all off-road. Stuff like the Colorado Trail, Kokopelli Trail, and Maaah Daah Hey Trail are mostly all off-road. There are some nice routes from the Metro up to the North Shore area where you could camp and dabble in some off-road along the way. Are you thinking self support or someone driving up and meeting you along the way with supplies?

Has anyone done the Maah Daah Hey trail? Is it pretty technical or is it just long? Is it possible to do it in 2 days?Technical as in jumps? No. Its basically single track the whole way with some big climbs, nice vistas, an ice cave side trail and some fun downhill sections. There are water pumps along the way but I'd make sure they will not be disconnected this time of year.
You might run into people on horses. If you do (if you don't already know this) the proper etiquette to not spook the horse is to dismount your bike step off trail with it a bit and let the horses pass. Horses don't like bicycles and they have been know to throw riders when they get spooked by them.
It's definitely a trip worth taking and I'm sure many here will agree. If you have the time I say go do it. I've never seen anyone come home from there disappointed. There might even be a write up on the trail on this site.
It can be done in two days but it will require require two full days of riding and there are some big climbs. I think it took us about 36 hours but we didn't really stop much and we only slept about 6 hours. It was about 105 degrees when we went too so the heat factor played a big role in getting everyone worn out.
