Any ideas on what to get for a new build with my custom steel frame that has a one inch tube? Does anyone even make a good 100mm XC fork with one inch?

I believe the Marz MX Comp came in a 1" steerer model within the last few years.

I'd look for good used forks on Ebay or go for a rigid. I don't know of anything that is really all that competitive of a fork that is offered in a one inch these days.

You might do some careful measurement of the axle to crown measurement on the existing fork to see what using a 100mm fork will do to handling. My guess is that if the frame is old enough to have been built around a 1" fork, using a modern 100mm fork is really going to throw the handling off.
If you are in LOVE with the frame, consider having a 1" fork made. I believe you can also get a 1" rigid fork as a Pace RC31. There are also a number of other options available too.

Checked on the MX and its discontinued. This frame has never had a fork on it so its hard to tell about the handling. Let me redirect then. what about used quality 1" suspention forks that i could have QBP rebuild for me.
