Can i break a 11-34 cassette and use the cogs?

although they aren't made for it and the spacing may not be used, if the back side of the cassette has the 4 small bolts then it can be broken apart by removing the four small bolts. This can only be done on the cheaper cassettes.

If the cassette doesn't have bolts, it will have pins holding it together. If so, just grind down the heads of the pins and it'll come right apart (you won't be able to put it back together though).

Heads up. Since you'll be using these on a freewheel body you should know that the cogs taken from cassettes will chew up an aluminum carrier in a heartbeat.

If you have less expensive hubs no biggie. If you have a King, Hadley or DT Swiss hub you might want to invest in a Surly or Endless cog that wont hurt your carrier (<$25).
