This is a little shout out to all who might be jonesing for some singletrack when we have snow on the gound up here.
A short 6 hour drive away is the wonderful city of Kansas City, MO.
The Earthriders IMBA club down there have built some incredible singletrack inside the city.

There is also some pretty cool single track just west of KC, in Lawrence, KS. Check out Clinton Lake SP and Perry Lake SP. Both have excellent trails. Burrito King is my choice for post ride nutrition:D

In addition to the city trails there is also CHowder state park in North Central MO that has some great riding! I got a guided tour of them last year by the park ranger/trail builder who is responsible.
There is also a Resevoir noth of the city that has some good riding. Check the website for info.

As a 4 year resident of Kansas City I must disagree about the viability of Kansas City as a "Fat Tire" destination.... Landahl Park and Shawnee Mission park are both great trails, but that seems like it, sometimes.
A lot of the trails they have listed on MTBReview are short, < 1 mile segments that really aren't worth driving all over the city for.
Lawrence is really another city, anyway. About 45 mins drive from the western part of KC.
Road riding really stinks around there, too. 95% of the roads away from the city are gravel farm country roads (i.e. forget the road bike) and most of the paved roads have high speed limits, narrow/nonexistent shoulders and are overtraveled compared to around here.
We are really lucky in Minneapolis. And while Kansas City has its merits (and definitely bring your bike if you're obligated to go down there for another reason) I personally would spend my $$$ on a fat tire vacation somewhere else.
Just my $.02
